BBQ Chicken with Fruit Salsa (Paleo & Whole 30)

This recipe combines savory BBQ chicken that’s grilled to perfection with a sweet fruit salsa for a delicious summertime meal! This BBQ Chicken and Fruit Salsa is simple to make yet is packed with so much flavor. It’s Paleo and Whole 30 approved and does not contain any gluten, grains, dairy, eggs, nuts or refined sugar!

I love fruit all year around, but there is something about enjoying fruit during the summer that makes it that much better. This fruit salsa is the perfect addition to your next summer barbecue. It’s easy to make and adds so much flavor to the BBQ chicken. I use Primal Kitchen’s Golden BBQ Sauce because it’s sweet, tangy and savory which pairs well with the sweetness of the salsa. It’s also made with real ingredients and happens to be Paleo & Whole 30 approved. Plus, it’s certified gluten free so you don’t have to worry about hidden gluten. If you like sweet and savory combos, then this is the recipe for you!

Other Options for Cooking the Chicken

If you don’t have a grill or don’t feel comfortable grilling (this was me up until this year), you can also bake the chicken in the oven. Marinate the chicken like you would if you were grilling it. Place the chicken on a baking sheet and top with the remaining BBQ sauce. Bake at 350 degrees for about 20 minutes or until it reaches an internal temperature of 160 degrees.

How Long Will the Salsa Last

The fruit salsa will last 2-3 days in the refrigerator. However, I must warn you that it won’t look as pretty as when you first make it. The juices from the fruit mix together and it all blends together but it still tastes just as good!

Let’s Get Grillin’

  • Step One: Add the chicken to a quart sized Ziploc bag and pour 3/4 of the jar of BBQ sauce over the chicken. Close the bag and mix the chicken with the marinade by moving it around in the bag. Marinate the chicken for 3-4 hours. If short on time, make sure to marinate it for at least 30 minutes. The longer you marinate the chicken, the more flavor it will have.
  • Step Two: Cut the mango, pineapple, peaches, and strawberries into small pieces. Place the fruit into a bowl and add the lime juice, lemon juice, cilantro, and salt. Mix together and place in the refrigerator while grilling the chicken.
  • Step Three: Preheat the grill on high heat. Once heated, turn the grill to medium heat and add the chicken. Spread the extra BBQ sauce on top of the chicken while it’s on the grill. Grill the chicken for 5-8 minutes on each side or until it reaches an internal temperature of 160 degrees. Remove the salsa from the refrigerator and serve over the BBQ chicken.

Pro tip: If you have left over salsa, don’t throw it out! It goes perfectly with tortilla chips…you can thank me later! My favorite grain free tortilla chip brand is Siete.

Ingredients

  • Chicken:
  • 6 chicken breasts

  • 1/2 cup mango

  • 1 cup pineapple

  • 3/4 cup peaches (about 1 peach)

  • 1.5 cups strawberries

  • 1/2 Tablespoon cilantro

  • 1/2 teaspoon salt

  • Juice of 1/2 a lime

  • Juice of 1/2 a lemon
